Hi,
I would like to locailse the porfolio category name in the titlebar. As you can see from the screenschot, all my website is in Italian, but the title for portfolio category is still in English.
This text cannot be adited from the .pot file you provide with the theme. What can I do?

You can either update the theme POT file using poedit or translate it as described here https://support.shufflehound.com/theme-translation/ or use any of the following plugins to change it.

as I wrote in my original post, that is not possible as the strong “portfolio category” is not present in the pot file you provide. I have already successfully localised the rest of the theme, excluding that title.

I’ve already edited and translated all the file with poedit, created the new PO and MO files and added them to my website, but that title is still showing in English.
You can’t directly change that file.
You need to use POT file editor such as poedit as described in the following page.

I mean, I am changing the POT file using poedit. Still can’t find the string “portfolio category”. It’s not there.
It is a custom taxonomy name generated by Unyson plugin and not theme so you have to translate the plugin.
The easiest way to do this is using any of the following plugins.
