I’d like to change the Portfolio filter default button from “All” to “Todos” as the site is in Spanish.
Is this something that can be done from the child theme functions doc? Or will I need to edit a template file?

You can change it either by translating the theme as described here https://support.shufflehound.com/theme-translation/ or using any of the following plugins to change it.
