I found another problem. I cannot modify body font size setting.
I cannot type anything in but those characters : &锑(§è!çà)-
I’m using a macbook pro azerty keyboard. I guess with a qwerty keyboard those characters would be : 1234567890
I don’t see any workaround for this one. (In dev mode i can use browser console to inject value into the input using javascript, but in production, admin won’t be able to do that)

I have tested it on my test site and it’s working fine for me using latest version of Gillion theme as displayed in the attached screenshot.
Please make sure you are using below latest version of theme.

Also could you please try changing it from theme styling settings as shown in the second attached screenshot?

I’m using Gillion v3.1.0.
I tried to change it from theme styling settings as shown in your second attached screenshot, but same issue.
If i disable javascript event onKeyDown on this input field, i can type numbers, it’s not a solution. Has i said, in production, the blog admin isn’t technical as i am, he won’t be able to work this around.
I identified the problem.
Unyson, add a javascript file that prevent typing : /wp-content/plugins/unyson/framework/includes/option-types/typography-v2/static/js/scripts.js line 88 to 112
This script is not compatible with apple keyboards… I’m using a macbook pro as i said.
So who should i contact to have that fixed before next friday ?
Please make sure that you are using latest version of Unyson plugin and id the issue persists then please contact Unyson plugin support to resolve it.
