Hi,
I would like to have a defined text box on an image, I have tried text overlay but it’s not quite the effect I am looking for.

I hope you are well today and thank you for your question.
I am not sure which page builder you are using but if you are using Unyson page builder then you can achieve it by adding a background image to the column / section and add text box content element in it having required text.

You can also do it using WPBakery Page Builder the same as described above.
