Hi there,
I’m trying to have a blog post with full width image at the beginning of the post as in the first screenshot (from your demo). I’ve already set the general theme settings to full width but anyway I’m not able to have the post in full width (don’t have that layout selection listed).

You can achieve it by setting the post style as shown in the attached screenshot.
