I just bought the Gillion package and I don’t find any documentation available to learn how to build this theme https://gillion.shufflehound.com/home/background-image/ on my Blog.
Can anyone help me?

You can achieve this by setting the image in the theme General settings as shown in the attached screenshot.

I bought this theme not the gillion package, and is kinda annoying that I’m not able to see the theme that I bought!!
It seems you are misunderstanding here.
You have bought Gilliin WordPress theme and the page URL that you have shared is created using Blog template of the theme by setting it in the Page edit screen as shown in the attached screenshot.
In the previous reply I explained how to set background image for the page which is displayed on the shared page https://gillion.shufflehound.com/home/background-image/
Why can’t you guys provide a STEP BY STEP article specifically for the theme that I bought?
Do I have to guess everything? Do you think that makes sense?
Please talk with your team and put together a clear document or instructions manual where I can see how to do the full setup of the background image theme.
Another question that I have is how do I remove the “made by Shuffle hound” (sent attached)

You can remove it by unchecking Developer Copyrights option in the theme footer settings as shown in the second & third attached screenshots.
