I’m trying to replicate the portfolio like the corporate page here, and I can’t work it out: https://jevelin.shufflehound.com/corporate
I’ve looked at the support documentation and my portfolio item doesn’t look like the one on there, I don’t have Project Gallery, Project Cover Image or even Page Settings. Image attached.

That metabox may be displaying in the bottom for you as shown in the attached screenshot.
If it doesn’t then would you mind if i log in to your site and do some troubleshooting? If this is ok then could you please share me your site log in details privately by adding them in the box having text “Click here to share private content. Only you and forum moderators will be able to see it.”?

So I’ve turned off pagination but so it doesn’t reload the page each time but then it shows all of my images. Is there any way to have lets say 10 images but displays 4 at a time without having pagination? I just want it to filter the images

It goes to top because the page reloads and the portfolio content element is added in the bottom.
If you don’t want it to happen then you have to develop custom code.

To achieve this, you have to develop custom code in the child theme of Jevelin theme.
