The WordPress default templates are only used for pages so I am not sure which templates you are referring to.

Dear Sirs,
My question is how to make my category AND single post page to use the same ‘template(s)’ as the one from the demo “Full width slider”:
e.g. my category page now: https://kiddowear.com/category/health/
and i would like to look like in the demo: https://gillion.shufflehound.com/home/category/lifestyle/
2. The same with the single post page:
and I would like to use the same template as here: https://gillion.shufflehound.com/home/2017/01/31/how-to-climb-the-career-latter-and-dont-waste-your-youth/

You can achieve this by enabling titlebar and right sidebar in the theme settings as shown in the attached screenshots.

I did what you proposed in the screenshots, however it still does not work. Can you please check it using the login credentials and tell me what is wrong?.
Please note that we don’t need the sidebar on the start page, on category and single post page its ok – just not on the starting page.

This website is LIVE and uses custom header and footer – now i noticed that someone changed that, please if you changed something revert it immediatelly, cause the site looks bad!

I logged into your site and saw it is working fine If I use Gillion theme instead of its child theme.
So it seems the issue with your custom child theme and the code that you have developed in it.
To resolve the issue, you have to correct the custom code developed in your child theme.
