Hi,
How do I edit the product category on a product page after I save and publish it? The page editor changes when I publish. Please see screenshots for reference.

It seems from your shared screenshots that the page editor changes from Classic editor to Block editor on publishing it.
Please try using a classic editor as described in the below pages.

However, I noticed that with regards to the product categories, some products are not showing up in the homepage widget WooCommerce Recent Products.
For example, I have an Audio Products category with subcategories Headphones, Earphones, Handsfree.
Products don’t show up when I click the Audio Products category, or even the Headphones, Earphones, and Handsfree categories on the homepage widget. They do show up when I click these categories in the Shop. I’ve attached a few screenshots. I removed the filter from the WooCommerce Recent Products widget for the moment but we would like to have it. Could you help us find out why these are not showing? I double checked in the product pages backend and they are correctly marked to these categories.

Could you please share me the page URL from your site where it is not displaying so that I can troubleshoot it?
Also please try increasing the number of products displaying there.
