Hello!
When we purchased this theme it said that there were 6 different blog layouts available. I am having some trouble locating where these are. When I switch between the 3 Styles that I see available, I am seeing nothing change in the layout.
I am trying to get the blog page to appear not tiled and more linear. Is there an option that isnt tiles?

I hope you are well today and thank you for your questions.
You have to set Blog layout to the blog page then you can select Blog layout style from page settings as shown in the attached screenshot.
