Hello,
I need to update my website to WordPress 5.0, so I would like to know if Gillion theme and his plugins are compatible with Gutenberg. It’s ok to do the update?

Yes they are compatible with WordPress 5.0. You have to just use classic editor to use other page builders as described in the below pages.
