For some pages, I think that the person updating the page, not me, may have clicked on one of the editor options that displays at the top of an editing page. It somehow reverts the page to a really old version and is basically broken. I have to go into revisions to replace the messed up page with an older one, and then switch page builder to wpbakery. Is this a known issue?

Doesn’t seem like a known issue.
Can you please let us know if the theme and the plugins are updated? And are you using the WPBakery page builder or the Unyson page builder?
Also, check if you have multiple page builders active. In some cases that could cause some compatibility issues.
