I’m not sure when this changed, but we usually added our google site tags and various strings of coding into the theme editor through “theme header”, and now I can’t seem to find it. How should I be adding site tags and schema markup now?

Nothing is changed in the theme and the theme editor is a functionality provided by WordPress.

Thanks for the fast response! I actually didn’t know about that plugin. That will help for future integrations. Turns out it was just on a couple of my sites that the “Theme Headers” changed to just “header.php”.
