how can i remove the text in the photo to only show the “enter” email box (ie. remove the mail letter, and “get the information first”?

You can configure it from admin area.

Exactly as it shows in the screenshot, name/email address field for the subscription form. Different background, however.

Extra buttons can be easily added from here:
https://thespeakerplug.com/wp-admin/admin.php?page=mailchimp-for-wp-forms&view=edit-form&form_id=848.Looks like you are using this subscription box in Visual Composer plugin, therefore you can change background by changing that section row background image.
