Is there any way to order categories blog (at menu blog page) not in alphabetical mode?
I have a category that I need it appears as the last one.

I am not sure what you are referring as “categories blog (at menu blog page)” so could you please tell me a bit more in detail?
Also how do you want it to order if not alphabetically?

What I want is to be able to sort the names of the categories not alphabetically but by importance of concepts: an order that I can decide.

You can sort them by editing your Blog page and order categories in the page settings as shown in the attached screenshot.
