How do I make blog content centralized like in this example:
On my website text is spread out through the whole screen, it looks really bad for the eye to read.

Please make sure that you have set the Content Width option in the theme General Settings as shown in the attached screenshot.
If you are still facing the issue then could you please share your site URL where it’s happening so that I can troubleshoot it?
