Can I disable Unyson and still have the Javelin theme running?

No, the Unyson plugin is a required plugin by theme but you can disable all the plugin extensions.

When we installed the Jevelin theme, our GPU usage sky-rocketed and we have been experiencing overages every month. I used SSH to see how much GPU was going to each plugin, and the Jevelin theme plugins are using almost all of our GPU. Is there a reason it is so high?

This may be because these plugins are handling two much data on your site which need more processing.
Okay, how can I fix that? I need to get our GPUs down.
