Yes, it is expected behaviour on smaller screen sizes.
If you want to display author avatar image on smaller screens then try adding the following CSS code in the Custom CSS code option of your theme on the below path.
Admin Area -> Appearance -> Theme Settings -> Custom Code -> CSS Code

You can always edit non-blog static pages using page builder.

I am using Gillion theme which has 15 templates within it,
currently, I am using “clean template” but have discovered its not to my taste, now I want to use another template ‘lifestyle”

No, you won’t lose it if you use the new One Click Demo Install method from Appearance > Import Demo Data

The blog page is a dynamic page and not static page so you can only change its settings from its Page Settings by editing the page.
You can’t change individual elements of it using any page builder.
If you want to edit any post content or image then you can do so by editing that specific post in your site admin area.
