Is there a Shufflehoud widget that only shows popular posts? Or is there a way the ‘Shufflehound post tabs’ can only show the popular posts.
To achieve this, you have to develop custom code in the child theme of Gillion theme.

You can remove it by adding the following CSS code in the Custom CSS code option of your theme on the below path.
Admin Area -> Appearance -> Theme Settings -> Custom Code -> CSS Code

The above-shared plugin solution is an automatic procedure that deletes all the content on your website.
The page and post titles are displayed in the h1 heading tags so you need to create the titles accordingly.

how would I go about editing the words where it says home?
You can change it from the theme settings as shown in the attached screenshots.
Also, the category font colors and Header title are white, where would I go about changing the color?
You can try changing it by using the Yellow Pencil editor as described in the below page.

Also, what is the standard dimensions of the title bar, I am trying to place an image there, but it keeps getting cut off?
There is no standard dimension of the title bar as it gets changed based on the title bar text but the minimum height is 326px and there is no limitation on width but based on browser width.

The popular posts are determined based on the number of visits the post receives therefore the popular posts are different on your websites.
The theme saves the count in the post custom field gillion_post_views and increases it with every post visit.

I logged into your website and edited the home page there I can see the Page Settings as shown in the attached screenshot.

There is no old or new child theme and you can use any of them.
You have to just install and activate the theme on your website.
