Some demos and their content are created by Unyson Page builder and not WPBakery Page builder so you can only edit those content by using Unyson Page builder and not vice-versa.

The instagram plugin is a downer as I liked how it is on the demo pages, is there a good alternative that is like it?
You can search & use any other Instagram widget plugin on your site by selecting the plugin from below listed plugins.

This is happening because you are redeclaring the function gillion_tag_widget_limit in the child theme which is already declared in the Gillion theme.
You have to modify this function using the filter which is used in the Gillion theme as below.

When i installed the theme, the update to WP Bakery doesnt happen, i though it came with WP Bakery and Slider Revolution as standard?
You are using the plugin bundled with the theme therefore you are not direct customer of that plugin and cannot update that plugin until you purchase it.
The same applies for Slider Revolution plugin.
We update the plugin with every new theme version. In this case you can just delete old plugin version and reinstall latest plugin version bundled with theme from Appearance -> Install Plugins
I want to access the WP Bakery Gillion templates but cant add them to any of my pages or blog posts ?
I am not sure what you meant by adding them to the pages so could you please describe it a bit more in detail?
Also I get an error when trying to add the instagram plugin too.
That plugin is removed from the WordPress repository.
We will remove this plugin from a recommendation in the future version of the theme.
