Ok I can see it is working on the site using Unyson page builder but not with WPBakery visual page builder so could you please create a page using Unyson page builder on the site https://www.yvesdeckenbrunnen.com/wordpress/ and add Google content element in it to check whether it works fine and do the opposite on the site https://www.yvesdeckenbrunnen.com/yvoloTest/ ?
If you want to achieve the titlebar layout as displayed in the below page then you have to configure the page settings as displayed in the attached screenshot.

Sorry to hear of the problem you are having.
It seems you are confused between the different editors and also with Gutenberg editor that came with WordPress 5.0.
The theme is compatible with WordPress 5.0 but you have to use any of the following editors.
Gutenberg editor
Unyson page builder
WPBakery page builder
I think the pages on your site might have created using either Unyson page builder or WPBakery page builder so you can only edit those pages using these page builders but WordPress 5.0 came with Gutenberg editor as a default editor so you have to switch from Gutenberg editor to those editors using classic editor as described in the below pages.
