Please make sure that you are using below latest version of the theme and plugins.
This can be due to plugin conflict on your site so please try temporary deactivating all plugins except Unyson plugin and WpBakery page builder plugins and see whether everything works fine and then enable the plugins one by one to see which plugin is conflicting if any.

the first, the Home tab which remains the same color even if I click on another anchor
This is because as you are using one page website so the home page menu item is always active as you are always on home page which is the current page.
the second, I would like the anchors to change color when you scroll

But still, in mobile view, it’s not looking good. There is a lot of gap in the top section of the page.

I have tested it on my test site and it’s working fine for me using latest version of Gillion theme.
