Would you mind if I log in to your site and do quick troubleshooting? If this is ok then could you please temporarily create an admin user account and share me the account login details privately by adding them in the box having text “Enter your private content here (only you and forum moderators will be able to see it)”?
The logo image is not cropped and I don’t see it blurry as shown in the attached screenshot.

You can remove it by adding the following CSS code in the Custom CSS code option of your theme on the below path.
Admin Area -> Appearance -> Theme Settings -> Custom Code -> CSS Code

Yes, you can apply height to the header by adding the following CSS code in the Custom CSS code option of your theme on the below path.
Admin Area -> Appearance -> Theme Settings -> Custom Code -> CSS Code
header.primary-desktop { height: 265px; }
I logged into your website and saw this is happening because the Internal Server Error occurred on your website as shown in the attached screenshot.

The “Single Title” element doesn’t have any setting as it just displays the title of the post when used inside the post content.
Instead, you can use the Heading element If you want to display a title or heading.

It seems the theme jQuery script is causing the issue as jQuery is updated in the latest WordPress version 5.5
The issue is resolved in the below latest version of the theme so please update the theme as described here https://support.shufflehound.com/updating-theme/

If you want to use the Gutenberg editor then please disable the Classic Editor plugin that you are using on your website.
