1.- How can I deactivate it?
It is bookmark that you can disable from the theme settings as shown in the attached screenshot.
2.- When I activate it again, how can edit the url “/?read-it-later “?
To edit it, you have to develop custom code in the child theme of Gillion theme.

Just delete the existing wpbakery plugin and reinstall it from Admin Area -> Appearance -> Install Plugins after activating the Jevelin theme.

It seems from your shared screenshot that you have installed the Gillion theme but having an issue importing the demo content.
I have tested it on my test site and it’s working fine for me using the latest version of Gillion theme as displayed in the attached screenshot.
Please make sure that you are using below latest version of the theme.
Are you using nginx server locally?

What pagination settings have you configured in the theme WooCommerce settings as shown in the second attached screenshot?
Does it work fine for you using any default WordPress theme such as Twenty Twenty?

I would like help to update my theme (Gillion). I’m afraid of losing everything I customized in Gilion with the update. Can this happen?
If you have not made any changes in the theme file code then you don’t need to worry as you won’t lose any changes made.
How is the best way to update?

No, the theme update will persist the changes you have made using theme settings or in the content.
