There isn’t any option to change that symbol without custom coding.
include Top bar navigation, and set up as in demo version
You can display Top bar by enabling it in the theme settings as shown in the attached screenshot.

Please refer my above shared screenshot and see there are two different icons there one is “Social Share Icons” and another is “Social Media Icons”.
The Icons displayed in your site header is “Social Media Icons” and the icons displayed in the post content is “Social Share Icons”.
These are two different icons which provide different functionality so you won’t find Instagram and youtube icons in “Social Share Icons”.

That is the portfolio category page that displays portfolios so do you want to display pages instead of portfolios?
Also how do we enable WPBakery for blog posts?
You can enable it in the WPBakery Page Builder Settings as displayed in the attached screenshot.

No, need to deactivate WP Super Cache plugin, just clear its cache or contact the plugin support to do it.

Can some of our pages be in Unyson and some be in WP Bakery without having an issue or do they all have to be in the same page builder?
Yes, you can use any page builder to create pages but you can use only one page builder at a time so If you use Unyson then you can’t use WPBakery and vice-versa.
If you create any page using page builder and then switch the page builder to another one then you will lose the content.
