No, there is no control for it.
Currently, the theme only displays a lightbox for the image galleries created using the classic editor and not the Gutenberg editor.

I am not sure what you mean by “menu within the existing header picture” so could you please describe it a bit more by sharing the screenshot?

To remove it, please disable the white frame option in the theme settings as shown in the attached screenshot.
a row of 3 identical block that I cant align no matter how I change the setting? The third block is a bit larger than the 2 first ones. see attached.

Please change the above shared CSS code as below.
.sh-header-builder-mobile-logo, .sh-header-builder-main-content-left { display: none; }You can set the logo image size around 100 X 25.
The custom header template is not a part of the theme but the demo content that you have imported on your website.
To achieve this, you have to develop custom code in the child theme of the Jevelin theme.
