These are displayed dynamically by WooCommerce template files so to change them you have to edit WooCommerce template files.
Alternatively you can try using following plugins to change text on those pages.

The arrow < displays previous project and the arrow > displays next project based on the date which seems working fine on your shared site.
Do you want them to work any other way?

Please test it using different browser or deactivating your browser extensions.

If you don’t need Jetpack plugin then you can just deactivate it on your site plugins section.
You can create and use image Gallery on your site as described in the following page.

It is not an error but the informative message displayed by Jetpack plugin that you are using.

I am not sure what you meant by ‘include the slider as a hero page’.
If you want to set only one image in the slider without carousel then you can do so by creating static one slide slider and not posts slider.

Alternatively you can just delete old theme and install latest theme by downloading it from above shared reply.

You have shared the same screenshot that I have shared so could you please tell me how you want the Gallery to display?

I just uploaded the latest Gillion theme (2.1.1) to our staging area of our site to test and make sure all went ok with the update and it did not. I am getting this fatal error after updating to 2.1.1:
The theme declares the class Widget_Posts_Slider only one time so it seems you are using plugin which is declaring this class Widget_Posts_Slider causing the error so please try deactivating all plugins except Unyson plugin.
As you will see, the “Ink With Intent” featured post image does not show.
I can see it is displaying the image as shown in the attached screenshot.
Please advise.
