Yes, you are right the tab element displayed in your and my shared screenshots are Unyson page builder element.
The WPBakery provides different tab element and it displays differently.
You can can’t use Unyson tab element in WPBakery and If you switch the page builder then you will lose the content.

The Gillion elements should display in the latest version of WPBakery plugin.
Please make sure that you are using below the latest version of the theme and try deactivating and reactivating the theme and WPBakery plugin.

As said above, this is not possible to achieve using CSS code as the aspect ratio of the image will be maintained so it wonโt fill the required size.
So don’t talk about CSS code and instead, you have to develop custom code as described above.

No, currently there isn’t any option to change the order of gallery images.
The Gutenberg Editor is a default editor of latest WordPress version which seems you are already using displayed in your shared screenshot.
